TESTING THE FRUIT
The morning starts with coffee and baked goods as we head out to sample berries, test sugar levels and see which varietal is ready for harvest
HARVEST
Bring along your brimmed hat and long-sleeved shirt! We will get started early to avoid the heat of the day and have extra hands available, so don't be scared off by a little work under the desert sun
CRUSHING & DE-STEMMING
Once we have pulled our fruit, we will learn about processing whites vs. reds and styles of wine as we crush & de-stem our bounty
PRESSING
Some wines require we go direct to the fruit press to extract the juice from the solids. We will discuss techniques and press our grapes if needed
FERMENTATION
It is time to talk about the fermentation process...think yeast and sugar!
BOTTLING
The day finishes with bottling & corking some of our 2022 wines! A free tasting and charcuterie is a great way to end to the day
